Corn was indigenous to America, but is now grown throughout the world. It is used as a vegetable, briefly boiled or roasted or eaten with butter. And it would also interest you to know that the favourite popcorn, made by popping the small corn kernels, is a wholesome cereal food and is easily digested. Besides this, corn sees its use in various other ways – salads, soups, subzis and even sweets too!

Cook time : 16-20 minutes

Ingredients for Corn And Pumpkin Pulao Recipe

  • Corn Kernels 1/2 cup

  • Pumpkin peeled 1/4 medium

  • Basmati rice soaked 1 1/2 cups

  • Oil 2 tablespoons

  • Cloves 6-7

  • Cumin seeds 1 teaspoon

  • Dried button red chillies (bor mirchi) 7-8

  • Onion sliced 2 medium

  • Bay leaf 1

  • Lemon 1

Method

Step 1

Heat oil in a non stick pan. Add cloves, cumin seeds, red chillies, onions and bay leaf. Mix well and sauté till onion turns brown. Roughly chop pumpkin into medium pieces and add along with salt. Mix well, add corn kernels and mix again.

Step 2

Drain soaked rice and add along with 3 cups water and mix well. Cut lemon into thick slices and add. Mix well, cover and cook on medium heat till done. Switch off heat and let it stand for 5 minutes. Serve hot.
