Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Creamy Basil Chicken Recipe

  • Chicken breasts 4

  • Garlic chopped 1 tablespoon

  • Salt to taste

  • Pesto sauce 1 tablespoon

  • panko bread crumbs 1 cup

  • Red chilli flakes 1 teaspoon

  • Crushed black peppercorns to taste

  • Egg 1

  • Oil for deep-frying

  • Cherry tomatoes halved 4-6

  • coriander sprig for garnishing

  • Creamy pesto sauce

  • Butter 1½ tablespoons

  • Refined flour (maida) 1 tablespoon

  • Milk 1 cup

  • Red chilli flakes ½ teaspoon

  • Salt to taste

  • Pesto sauce 1 teaspoon


Step 1

Take chicken in a bowl. Add garlic, salt, crushed peppercorns and pesto sauce and mix well. Set aside to marinate for 30-45 minutes.

Step 2

Take breadcrumbs in a shallow plate. Add chili flakes, crushed peppercorns and salt and mix well.

Step 3

Break an egg into the marinated chicken and mix well.

Step 4

Coat each chicken breast with breadcrumbs.

Step 5

Heat sufficient oil in a pan.

Step 6

To prepare creamy pesto sauce, heat butter in a non-stick pan. Add flour and sauté for 30 seconds. Add milk, mix and cook till it thickens.

Step 7

Add chili flake and salt and mix. Add parmesan cheese and mix. Switch off heat, add pesto sauce and mix well.

Step 8

Deep-fry the chicken breasts in hot oil till golden and crisp. Drain on absorbent paper.

Step 9

Put some cherry tomatoes on one side of a serving platter and garnish it with a coriander leaf.

Step 10

Slice and serve hot with creamy pesto sauce.
