By Sanjeev Kapoor 24 Feb 2017 in Recipes Course New Update Advertisment Main Ingredients Chicken breasts, Garlic Cuisine Fusion Course Main Course Chicken Prep Time 41-50 minutes Cook time 16-20 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Non Veg Ingredients list for Creamy Basil Chicken 4 Chicken breasts 1 tablespoon Garlic chopped to taste Salt 1 tablespoon Pesto sauce 1 cup panko bread crumbs 1 teaspoon Red chilli flakes to taste Crushed black peppercorns 1 Egg for deep-frying Oil 4-6 Cherry tomatoes halved for garnishing coriander sprig Creamy pesto sauce 1½ tablespoons Butter 1 tablespoon Refined flour (maida) 1 cup Milk ½ teaspoon Red chilli flakes to taste Salt 1 teaspoon Pesto sauce Method Take chicken in a bowl. Add garlic, salt, crushed peppercorns and pesto sauce and mix well. Set aside to marinate for 30-45 minutes. Take breadcrumbs in a shallow plate. Add chili flakes, crushed peppercorns and salt and mix well. Break an egg into the marinated chicken and mix well. Coat each chicken breast with breadcrumbs. Heat sufficient oil in a pan. To prepare creamy pesto sauce, heat butter in a non-stick pan. Add flour and sauté for 30 seconds. Add milk, mix and cook till it thickens. Add chili flake and salt and mix. Add parmesan cheese and mix. Switch off heat, add pesto sauce and mix well. Deep-fry the chicken breasts in hot oil till golden and crisp. Drain on absorbent paper. Put some cherry tomatoes on one side of a serving platter and garnish it with a coriander leaf.
