Ingredients
- 4-5 medium potatoes peeled
- 1 tablespoon garlic, chopped
- 1 cup milk
- 1 tablespoon oil
- Salt to taste
- 4 spring onions with greens
- 1 tsp crushed black peppercorns
- 3 garlic cloves
- 1 tablespoon butter
Method
- Cut potatoes into cubes.
- Heat oil in a non-stick pan. Add chopped garlic and potatoes and mix well. Add salt, mix and toss.
- Add ½ cup milk, stir, cover and cook.
- Roughly chop spring onion bulbs. Reserve two of the spring onion green stalks.
- Add chopped spring onion bulbs to the pan, mix well, cover and cook till the potatoes turn soft.
- Roughly chop the reserved spring onion green stalks.
- Add remaining milk, salt, half the chopped spring onion greens and 1 teaspoon crushed peppercorns. Mix well, cover and cook till done.
- Add crushed garlic and butter, mix well and cook for a minute.
- Serve hot, garnished with crushed peppercorns and the remaining chopped spring onion greens.
