How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Creamy Mushroom Risotto-SK Khazana Recipe

  • Arborio rice 1 cup

  • Button mushrooms sliced 8-10

  • Shimeji mushrooms chopped 10-12

  • Enoki mushrooms chopped 1/4 cup

  • Olive oil 1 tablespoon

  • Garlic chopped 1 tablespoon

  • Small onion finely chopped 1

  • White wine 2 tablespoons

  • Vegetable stock 4 cups

  • Salt to taste

  • Fresh thyme sprigs 2 + for garnish

  • Fresh cream 1 teaspoon

  • Butter 1 teaspoon

  • Parmesan cheese grated 2 tablespoons


Step 1

Heat olive oil in a non-stick pan. Add garlic and sauté till golden brown.

Step 2

Add onion, mix and sauté till translucent. Add button, shimeji and enoki mushrooms, mix well, and cook for 4-5 minutes.

Step 3

Add Arborio rice, mix well and cook for 1-2 minutes. Add white wine, stock and salt, mix and simmer for a few minutes.

Step 4

Add thyme, mix well, cover and cook for 10-15 minutes. Add cream, butter and parmesan cheese and mix till the cheese melts.

Step 5

Garnish with a thyme sprig and serve hot.
