Ingredients for Creamy Onion Soup Recipe

  • Onion 4 large

  • Vegetable Stock to deep fry

  • Butter 3 tablespoons

  • Black peppercorns crushed 5-6

  • Vegetable stock 6 cups

  • Potatoes chopped 3 medium

  • Salt to taste

  • Paprika 2 teaspoons

  • Cream 3/4 cup


Step 1

Chop three onions and cut one onion into thin round slices. Heat sufficient oil in a deep pan and deep fry the onion rings till golden. Drain on absorbent paper. Melt the butter in a pan and sauté the chopped onions, black peppercorns until soft and translucent. Add vegetable stock, potatoes, salt and paprika.

Step 2

Once it comes to a boil, lower the heat and simmer for about forty-five minutes. Strain the soup and blend the solids to a smooth puree.

Step 3

Add the strained liquid and mix well. Reheat the soup. Stir in cream and heat through gently. Serve piping hot garnished with onion rings.
