Curried Chicken Tea Sandwich

Ingredients list for Curried Chicken Tea Sandwich

  • 2 teaspoons Curry powder
  • 250 grams Leftover grilled chicken
  • 4 Brown bread slices
  • 1 tablespoon Mayonnaise
  • 2 teaspoons Cream cheese
  • 1 teaspoon Red chilli powder
  • to taste Crushed black peppercorns
  • to taste Salt
  • 3 stalks Spring onion greens chopped
  • as required Butter

Method

  1. Chop chicken into small pieces and place in a bowl.
  2. Add chicken juices from the grilled chicken, mayonnaise, cream cheese, curry powder, red chilli powder, crushed peppercorns, salt and spring onion greens and mix well.
  3. Apply butter on bread slices. Spread chicken mixture on two slices and cover with remaining slices. Discard the edges.
  4. Cut into triangles and serve immediately.
