The cuisine of Andhra Pradesh is reputedly the spiciest of all Indian cuisine. Foods include both the original spicy Andhra cooking and Muslim-influenced Hyderabadi cuisine. Rice is the staple diet and is used in a wide variety of ways.
Hyderabadi cuisine is influenced by the Muslim population, which arrived in Andhra centuries ago. Much of the cuisine revolves around meat. It is rich and aromatic, with a liberal use of exotic spices, ghee, nuts and dry fruits.

Ingredients for Dham Munj Recipe

  • Knolkhol medium sized pieces 3

  • Mustard oil 1 tbsp + to deep fry

  • Cloves 2

  • Black cardamoms 2

  • Cumin seeds 1/2 teaspoon

  • Red chilli powder 1 1/2 teaspoons

  • Fennel seed (saunf) powder 2 teaspoons

  • Dry ginger powder (soonth) 1/2 teaspoon

  • Salt to taste

Method

Step 1

Separate nolkohl leaves, wash thoroughly and chop them. Peel and wash the vegetable and slice thinly into semi-circular shapes.

Step 2

Heat sufficient oil in a kadai and deep fry the slices till brown. Drain onto an absorbent paper. In another kadai, heat one tablespoon of oil.

Step 3

Add cloves, black cardamoms, cumin seeds, red chilli powder and one-cup water. Add fried nolkohl, fennel powder, dry ginger powder and salt. Add the leaves. Bring to a boil and cook covered till done. Serve hot.
