How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Prep Time : 31-40 minutes

Cook time : 16-20 minutes

Ingredients for Dry Fruit Pulao Recipe

  • Basmati rice soaked 1 1/2 cups

  • Almonds 10-15

  • Cashewnuts 10-12

  • Raisins 1 tablespoon

  • Pure ghee 2 tablespoons

  • Bay leaves 1-2

  • Black peppercorns 6-8

  • Salt to taste

  • Saffron (kesar) a pinch

Method

Step 1

Heat water in a deep non stick pan. Heat ghee in another deep non stick pan.

Step 2

Add bay leaves, peppercorns, almonds, cashewnuts and raisins to the ghee and stir. Add rice and sauté for 1-2 minutes.

Step 3

Add salt and saffron and sauté for ½ minute. Add 3 cups hot water.

Step 4

When the mixture comes to a boil, again, cover and cook till the rice is done.
