By Sanjeev Kapoor 25 Mar 2021 in Recipes Course New Update Advertisment Main Ingredients Eggs, Fresh spinach leaves Cuisine Fusion Course Snacks and Starters Prep Time 11-15 minutes Cook time 26-30 minutes Serve 4 Taste Mild Level of Cooking Easy Others Non Veg Ingredients list for Eggs Spinach Wrap 8 Eggs 10-12 Fresh spinach leaves shredded 8 teaspoons Oil 1 teaspoon Butter 1-2 Green chillies finely chopped 1 Medium onion finely chopped 6-7 Button mushrooms finely chopped 1/3 cup Sweetcorn boiled and crushed to taste Salt 2 teaspoons Garlic burnt 1/2 teaspoon Mustard paste to taste Black peppercorns crushed as required Processed cheese grated to serve Tomato ketchup Method Break the eggs into a bowl, add salt and whisk well with a fork. Heat 2 tsps oil and 1 tsp butter in a non-stick pan, add green chillies and onion, mix and sauté till onion turns translucent. Add mushrooms, spinach, sweetcorn, salt and burnt garlic, mix well and cook for 1-2 minutes. Add mustard paste, mix well and cook for 1 minute. Transfer into a bowl and set aside to cool down. For each portion, heat 1 tsp oil in the same pan, add ¼ the egg mixture and spread it evenly. Spread some spinach mixture on one end of the eggs and sprinkle some cheese on top. Loosen the edges and start rolling starting from the end where the stuffing has been spread. Cook on both sides for a minute. Similarly cook more wraps with the remaining ingredients.
