Ingredients list for Fennel Marinated Paneer And Olive Skewers

  • 1 tablespoon Fennel seeds
  • 2 tablespoon Paneer
  • 200 grams Paneer (cottage cheese)
  • 1 teaspoon Lemon zest
  • 1 tablespoon Lemon juice
  • 2 tablespoons Olive oil
  • 2 teaspoons Black pepper powder
  • 20 Fresh mint leaves chopped
  • 1 Cucumber peeled and seeded
  • 10 Black olives pitted and halved

Method

  1. Cut the paneer into three-fourth inch cubes. Toast sesame seeds in a dry pan. Mix fennel seeds, toasted sesame seeds, lemon zest, lemon juice, oil and black pepper powder in a bowl. Add the paneer cubes and toss well.
  2. Cover and marinate for three to four hours in the refrigerator. Sprinkle the paneer with five to six chopped mint leaves. Cut the cucumbers into half inch cubes
  3. Thread one from remaining mint leaves, one olive piece, one cucumber cube and one paneer cube on to each skewer. Chill and serve.
