Ingredients list for Fig And Almond Salad
- 6 Fresh Figs diced
- 1/4 cup Almonds blanched, peeled and slivered
- 1 medium Cucumber peeled and diced
- 1 medium Apple diced
- 4 tablespoons Fresh mint leaves chopped
- 2-3 Lettuce leaves hand torn
- 1 tablespoon Lemon juice
- 1 teaspoon Sugar
- to taste Salt
- 1/4 teaspoon Crushed black peppercorns
- 2 drops Almond essence
Method
- Mix together figs, almonds, cucumber, apple, mint leaves and lettuce in a bowl. Refrigerate for one hour.
- Mix together lemon juice, sugar, salt, crushed peppercorns and almond essence in another bowl. Refrigerate for thirty minutes.
- Pour the dressing over the chilled fruits and toss well. Serve chilled.
