History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Fresh Nariyal and Pineapple Burfi Recipe

  • Coconut Freshly Scraped freshly scraped 2 cups

  • Pineapple Slices 4 tinned

  • Ghee 2 tbsps + for greasing

  • Sugar 1 cup

  • Green cardamom powder a pinch

  • Powdered sugar 2 tablespoons

Method

Step 1

Heat ghee in a non stick pan, add coconut and saute.

Step 2

Grind pineapple slices and add to the coconut and mix well. Add sugar and stir till sugar melts.

Step 3

Add green cardamom powder and mix. Cook till all the moisture is absorbed and the mixture forms a lump

Step 4

Add powdered sugar and mix well.

Step 5

Grease an aluminium burfi tray with ghee and transfer the coconut mixture onto it. Spread it evenly and set aside to cool.

Step 6

Cut into squares and serve.
