Italian cuisine has developed through centuries of social and political changes, with roots stretching to antiquity.  Italian cuisine is simple and a number of dishes having only four to eight ingredients.  They rely mostly on the quality of ingredients rather than elaborate preparation.
Noteworthy changes in Italian cuisine happened with the discovery of the New World and the introduction of potatoes, tomatoes, bell peppers and maize, which are now an integral part of this cuisine.  Italian cuisine is known for its regional diversity each with a distinct taste.  This cuisine today is probably one of the most popular in the world.

Ingredients for Gamberi Aglio E Olio Recipe

  • Prawns shelled and deveined 28-30

  • Garlic 2 tablespoons

  • Yellow zucchini 1 medium

  • Salt to taste

  • Crushed black peppercorns 1 teaspoon

  • Cherry tomatoes 8

  • Garlic finely chopped 1 tablespoon

  • Green chilli finely chopped 1

  • Grated green zucchini 1/3 cup

  • Yellow zucchini grated 1/3 cup

  • Basil leaves 8-9

  • Tomato sauce 6 tablespoons

  • Lollo rosso leaves 2-3

  • Dressing

  • Olive oil 3 tablespoons

  • Juice of 1 lemon

  • Salt to taste

  • Crushed black peppercorns ¼ teaspoon

Method

Step 1

Heat 1 tbsp olive oil in a non-stick pan.

Step 2

Cut yellow zucchini into thin slices vertically. Add salt, ½ tsp crushed peppercorns, 1 tsp olive oil and rub the slices well.

Step 3

Place slices in the pan and grill, flipping, for 2-3 minutes on each side. Remove from heat and place on a plate.

Step 4

Halve cherry tomatoes. Add garlic and 1 tbsp olive oil in the same pan and sauté for 1 minute.

Step 5

Add prawns, salt, remaining crushed peppercorns, green chilli and halved cherry tomatoes. Toss and add grated green and yellow zucchini, 3-4 torn basil leaves. Toss again and sauté well.

Step 6

Add tomato sauce, mix well and cook till prawns are done.

Step 7

To make dressing, combine lemon juice, salt, crushed peppercorns and olive oil in a bowl and whisk well.

Step 8

Place grilled zucchinis on a serving plate. Tear Lollo rosso leaves and place on it. Drizzle the dressing on top and put 2-3 basil leaves on it. Place cooked prawns on it, garnish with remaining basil leaves and serve immediately.
