Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Garlic Mushrooms Recipe

  • Button mushrooms 400 grams

  • Garlic crushed 2 tablespoons

  • Extra virgin olive oil 3 tablespo teaspoons

  • Salt to taste

  • Black peppercorns crushed 1/2 teaspoon

  • White wine 1 cup

  • Pinenuts 2 tablespoons


Step 1

Preheat oven to 180° C.

Step 2

Remove the stems of the mushrooms and put them into a bowl.

Step 3

Heat extra virgin olive oil in a non-stick pan, add garlic and saute till raw smells disappear.

Step 4

Add mushrooms, salt and crushed black peppercorns and mix well.

Step 5

Add white wine, mix well and cook for 2-3 minutes.

Step 6

Add pinenuts, mix well and cook for 2-3 minutes. Transfer into 4 individual shallow baking dishes evenly, drizzle 1 teaspoon extra virgin olive oil on each dish, keep them in the preheated oven and cook for 15-20 minutes.

Step 7

Bring them out of the oven and serve immediately.
