Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Gaurpapdi Recipe

  • Wholewheat Flour 2 cups

  • jaggery grated 2 cups

  • Ghee 1 1/2 cups

  • Cashewnuts chopped 10

  • Almonds slivered 10

  • Green cardamom powder 1/2 teaspoon


Step 1

Heat ghee in a kadai and add atta. Roast on medium heat till it gives out a nice aroma. Add cardamom powder and remove from heat.

Step 2

Mix well. Add the grated jaggery and mix well till well blended. Transfer the mixture onto a greased tray. Garnish with chopped cashewnuts and almond slivers.

Step 3

Cut into pieces of desired size and shape while still warm. Remove when set.
