By Sanjeev Kapoor 03 May 2016 in Recipes Course New Update Main Ingredients Tomatoes, Cucumber Cuisine Spanish Course Soups Prep Time 0-5 minutes Cook time 6-10 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Gazpacho 8-10 Tomatoes 2 slices Cucumber 1/2 medium Cucumber diced 2 small Green capsicums chopped 1/2 small Onion chopped 2 cloves Garlic chopped 4 tablespoons Olive oil to taste Salt 1/4 teaspoon Cumin powder to taste Lemon juice Method Wash and blanch tomatoes, peel, cut into quarters, remove seeds and chop roughly. Cut off the sides of bread slices and soak in a little water. Puree the tomatoes, cucumber, capsicums, onion and garlic in a blender. Add half a cup of water if needed Squeeze out the bread slices and blend along with other ingredients. Add olive oil while blending. Transfer to a bowl. Add salt and cumin powder and mix. Add lemon juice (or vinegar) and mix. Add about three cups of chilled water to adjust the consistency. Chill at least for an hour or two before serving.
