Relish a salad platter of thinly sliced tomatoes, with chunks of mozzarella, a drizzle of olive oil, sliced black olives and basil leaves. Arrange in concentric circles on a nice white plate. The word relish is just perfect here. And not just salads, for all those rich and good-looking Indian preps, the very famous onion-tomato masala is a must! Then, there are soups, beverages (call for the Bloody Mary!), snacks and even desserts made of these plump red things. Even the green ones are in use today. Must say, terrific tomatoes!

Ingredients for Gazpacho Recipe

  • Tomatoes 8-10

  • Cucumber 2 slices

  • Cucumber diced 1/2 medium

  • Green capsicums chopped 2 small

  • Onion chopped 1/2 small

  • Garlic chopped 2 cloves

  • Olive oil 4 tablespoons

  • Salt to taste

  • Cumin powder 1/4 teaspoon

  • Lemon juice to taste

Method

Step 1

Wash and blanch tomatoes, peel, cut into quarters, remove seeds and chop roughly.

Step 2

Cut off the sides of bread slices and soak in a little water. Puree the tomatoes, cucumber, capsicums, onion and garlic in a blender.

Step 3

Add half a cup of water if needed Squeeze out the bread slices and blend along with other ingredients.

Step 4

Add olive oil while blending. Transfer to a bowl. Add salt and cumin powder and mix.

Step 5

Add lemon juice (or vinegar) and mix. Add about three cups of chilled water to adjust the consistency. Chill at least for an hour or two before serving.
