Some say Chinese cuisine is 400,000 years old going back to the Peking Man and his use of fire. Some other accounts of the history of Chinese cuisine takes the beginning to the Chinese stone age. However today Chinese cuisine enjoys the distinction of being the most popular in the world.

We all desire harmony in our lives and this works on the ancient Taoist principle of Yin and Yang in which balance and contrast are the key. Each Chinese dish reflects a balance of taste, texture, aroma and colour. Be it sweet, sour, pungent, hot, salty or spicy – all the six basic flavours are incorporated deftly in all Chinese dishes.

Ingredients for Ginger Garlic Crispy Chicken Recipe

  • Ginger-garlic paste 3 tablespoons

  • Boneless chicken breasts 2

  • Red chilli paste 1½ tablespoons

  • Salt to taste

  • Black pepper powder to taste

  • Soy sauce 1 teaspoon

  • Cornflour/ corn starch 3 teaspoons

  • Oil for deep-frying

  • White bread slices 4


Step 1

To make the marinade, combine red chilli paste, ginger-garlic paste, salt, pepper powder, soy sauce and cornstarch in a bowl and mix well.

Step 2

Slit chicken horizontally into halves and further cut into two. Add these to the marinade and mix well. Set aside to marinate for 10-15 minutes.

Step 3

Heat sufficient oil in a kadai.

Step 4

Discard edges from bread slices and cut into small cubes. Place in a grinder jar and grind to make breadcrumbs. Transfer the fresh breadcrumbs onto a plate.

Step 5

Coat marinated chicken pieces in the breadcrumbs and deep-fry in hot oil till golden and crisp. Drain on absorbent paper.

Step 6

Serve hot with sweet chilli sauce.
