Ingredients

  • 1½ cups fresh green chana, blanched 
  • 3-4 garlic cloves
  • 2-3 green chillies
  • 1 medium onion
  • Salt to taste
  • ½ tablespoon cumin powder
  • 2½ tablespoons gram flour (besan)
  • 1 teaspoon baking powder
  • 1 tablespoon olive oil + for greasing
  • Microgreens for garnish
  • Red radish slices to serve
  • A few iceberg lettuce leaves to serve
  • Pickled beetroot pieces to serve
  • Garlic aioli to serve

Method

  1. Put green chana, garlic and broken green chillies into a food processer jar.  
  2. Roughly chop onion and add.  Add salt, cumin powder and a little water and process into a coarse paste. Transfer into a large bowl.
  3. Add gram flour and baking powder and mix well. Add olive oil and mix well. 
  4. Heat a non-stick waffle iron, grease with oil and pour some mixture and spread it evenly. Close and cook till golden and crisp. Remove and place on a serving plate. Make more waffles similarly.
  5. Garnish with microgreens. Serve hot with radish, lettuce, pickled beetroot and garlic aioli.
