By Sanjeev Kapoor 09 Jun 2021 in Recipes Course New Update Advertisment Main Ingredients Bread loaf, Red capsicum 1-inch traingles Cuisine Fusion Course Snacks and Starters Prep Time 11-15 minutes Cook time 26-30 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Grilled Vegetable Cheese Sandwich 1 Bread loaf 10-12 Red capsicum 1-inch traingles 10-12 Green capsicum 1-inch traingles 10-12 Green zucchini roundles 10-12 Yellow zucchini roundles 10-12 Yellow zucchini 1-inch traingles as required Cheddar cheese block as required Emmental cheese block 1 teaspoon Red chilli flakes to taste Crushed black peppercorns 1/2 teaspoon Dried mixed herbs 1 teaspoon Garlic , chopped 1 tablespo to grill Olive oil to taste Salt as required Butter to taste Ketchup Method Take red capsicum in a bowl, add green capsicum, green zucchini, yellow zucchini, yellow capsicum, red chilli flakes, black peppercorns, dried mixed herbs, garlic, olive oil and salt and mix well. Heat some oil in a non-stick grill pan, add the marinated vegetables and grill the vegetables till done. Slice the bread loaf thickly. Heat some butter in a non-stick pan, place 2 bread slices at a time in it and toast, turning sides, till evenly golden on both sides. Grate some cheddar cheese over the toasted slices. Now grate some emmental cheese over them. Spread some grilled vegetables over one slice and cover it with the other, cheese side facing downwards. Heat another non-stick pan, grate some cheddar cheese followed by some emmental cheese. When they melt and merge, keep the sandwich over it and fold in the edges to shape like a bowl. Remove from the pan and place on a plate. Lift the sandwich and place on a serving plate and place the cheese bowl over it. Make more sandwiches in the same way.
