Ingredients list for Grilled Vegetables In Greek Style

  • 2 Small brinjals halved lenghtwise
  • 115 grams Feta cheese cut into small cubes
  • 1 medium Red capsicum seeded and quartered
  • 1 medium Yellow capsicum seeded and quartered
  • 4 small Zucchinis halved lenghtwise
  • 1 tablespoon Lemon juice
  • to taste Salt
  • to taste Black peppercorns freshly ground
  • Marinade
  • 5 tablespoons Olive oil
  • 2 cloves Garlic crushed
  • 1 teaspoon Fresh parsley chopped
  • 1 teaspoon Fresh mint leaves chopped
  • 1 teaspoon Fresh oregano chopped

Method

  1. To make the marinade, combine olive oil, garlic, parsley, mint and oregano in a bowl. Mix well.
  2. Add the cheese and vegetables and mix gently so that they are well coated. Set aside for one hour.
  3. Heat the Grill Pan. Place only the marinated vegetables in it and cook for ten minutes or till tender, turning every few minutes.
  4. Transfer grilled vegetables onto a serving plate.
  5. Drizzle lemon juice and season with salt and pepper.
  6. Sprinkle the feta over feta and serve.
