Ingredients list for Ground Chicken Casserole
- 500 grams Chicken Mince
- 2 cloves Green Tomatoes
- 6 Black peppercorns
- 1 Clove
- 1/8 teaspoon Dried thyme
- to taste Salt
- 1/2 small Onion
- 3 Green chillies
- 6 medium Green tomatoes
- 1/2 cup Fresh coriander leaves
- 2 medium Green capsicum
- 2 tablespoons Oil
- 6 Corn tortillas
- 1/2 cup Sour cream
- 3/4 cup Cheddar cheese
Method
- Wash and drain chicken mince thoroughly. Peel and wash garlic. Grind one garlic clove, peppercorns, clove, thyme and salt in a mortar. Add this paste to chicken mince and mix well.
- Peel, wash and chop onion. Remove stems and wash green chillies. Wash green tomatoes. Clean, wash and roughly chop coriander leaves. Wash capsicums and wipe dry.
- Heat one tablespoon of oil in a pan, add onion and sauté till it turns translucent. Add chicken mince and continue to sauté over medium heat for ten minutes. Keep aside. Boil green chillies in half a cup of water for two to three minutes. Add green tomatoes and cook till they change colour. Drain and let cool. Transfer to a blender, add one clove of garlic, coriander leaves, salt and grind to a puree. Keep aside. Roast capsicums till outer skin is slightly charred. Remove skin and cut into strips. Preheat oven to 190° C.
- Heat remaining oil in a skillet and fry each tortilla on both sides for a minute each. Arrange three tortillas overlapping each other in a baking dish. Cover with a layer of mince, a layer of half the capsicum strips, a layer of half the sour cream and one third of the grated cheese. Repeat these layers. Cover with green tomato puree and bake in a preheated oven at 190° C for five minutes. Sprinkle remaining grated cheese and bake till cheese melts and turns slightly brown.
- Serve hot.
