Ingredients list for Jamaican Chicken Curry-SK Khazana

  • 400 grams Boneless chicken breasts Cut into cubes
  • 2 tablespoons Jamaican seasoning
  • 2 tablespoons Oil
  • 1 tablespoon Dried mixed herbs
  • 2 Medium potatoes peeled and cut into cubes
  • 2 Medium onions quartered
  • 1 Medium green capsicum diced
  • 1/2 Medium red capsicum diced
  • 2 Pickled jalapenos sliced
  • 1 tablespoon Garlic powder
  • 2 teaspoons Curry powder
  • 1 tablespoon Vinegar
  • 21 tablespoon Soy sauce
  • to taste Salt
  • for garnish Fresh parsley sprig

Method

  1. Heat oil in a deep non-stick pan. Add mixed herbs and chicken cubes, mix and sauté till the chicken changes its colour.
  2. Add potatoes, onions, green and red capsicums, jalapenos, garlic powder, Jamaican seasoning and curry powder and mix well.
  3. Add 2 cups water, mix, cover and cook till chicken and potatoes are fully done. Add vinegar, soy sauce and salt, mix well and simmer for 1-2 minutes.
  4. Garnish with parsley and serve hot with steamed rice.
