Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Kachche Aam ki Kadhi Recipe

  • Raw Mangoes peeled and cut into large pieces 1 1/2

  • Gram Flour 1/2 cup

  • Oil 1 tablespoon

  • Fenugreek seeds (methi dana) 1/4 teaspoon

  • Mustard seeds 1/2 teaspoon

  • Spring onions with greens 2-3

  • Dried red chillies 2-3

  • Curry leaves 10-12

  • Turmeric powder 1/2 teaspoon

  • Salt to taste

  • Red chilli powder 1 teaspoon

  • Jaggery grated 2 tablespoons

Method

Step 1

Heat oil in a deep non-stick pan, add fenugreek seeds and mustard seeds and let them splutter.

Step 2

Roughly chop spring onion bulbs with a little stem portion and add to the pan and mix well. Add dried red chillies and mix well. Roughly chop the spring onion greens and add.

Step 3

Put most of the raw mango pieces in a mixer jar with 2-3 tbsps water, grind to a smooth paste and transfer into a bowl. Add gram flour and whisk well.

Step 4

Add curry leaves to the mixture in the pan and mix well.

Step 5

Add turmeric powder, salt and 1½ cups water to the raw mango-gram flour mixture and whisk well.

Step 6

Add gram flour batter to the pan and mix well. Add the remaining raw mango pieces and mix well.

Step 7

Add red chilli powder and mix well. Add jaggery and mix well. Cook for 10 minutes, stirring at regular intervals.

Step 8

Serve hot.
