Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Lauki Moong Dal Recipe

  • Bottle Gourd peeled and grated 4 inch piece

  • Skinless Split Green Gram soaked 1 cup

  • Salt to taste

  • Ginger chopped 1/2 inch piece

  • Fresh mint leaves 8-10

  • Oil 1 teaspoon

  • Asafoetida a pinch

  • Cumin seeds 1 teaspoon

  • Cinnamon 1/2 inch stick

  • Curry leaves 6-8

  • Lemon juice 1 1/2 tablespoons

Method

Step 1

Boil the moong dal with four cups water, salt and ginger in a deep non-stick pan till it is almost done.

Step 2

Add the lauki and cook. Add mint leaves and continue to cook till the dal is completely done. Mash it with a hand blender. Heat oil in non-stick pan. Add asafoetida, cumin seeds, cinnamon and curry leaves and sauté till fragrant. Add it to the dal and mix

Step 3

Add lemon juice and serve hot with steamed rice.
