Ingredients list for Lemongrass Chicken Skewers

  • 1 inch piece Lemon grass roots chopped
  • 2 Boneless chicken breasts cut into 12 strips
  • 1 inch piece Ginger
  • to taste Sea salt
  • 1/2 teaspoon Crushed black peppercorns
  • 1/2 teaspoon Crushed red chillies
  • 1 Lemon
  • 1 teaspoon Fish sauce
  • 1 tablespoon Oyster sauce
  • 1 tablespoon Honey
  • 2 tablespoons Olive oil

Method

  1. Slice lemongrass root, ginger and put them in a mortar. Add sea salt, peppercorns, crushed red chillies and crush all together with a pestle. Squeeze the juice of lemon into the mixture, add fish sauce, oyster sauce and mix well. Place the chicken strips in a bowl, pour the above mixture over it and mix well.
  2. Let it marinate for 1 hour, preferably in a refrigerator. Add honey and mix. String the chicken strips onto skewers. Heat olive oil in a non stick pan on medium heat, place the skewers on it and cook for 2-3 minutes till golden, rotating the skewers a few times for even cooking. Serve hot.
