Ingredients 

  • 1 medium lettuce, chilled
  • 4 white bread slices
  • 2 tablespoons olive oil
  • 3 garlic cloves, chopped
  • 100 grams paneer (cottage cheese), cubed
  • 6 cherry tomatoes, halved
  • 1 tablespoon vinegar
  • 1/4 cup olive oil
  • Salt to taste
  • 1/2 teaspoon dried mixed herbs
  • 5-6 crushed black peppercorns 
  • 2 teaspoons chopped fresh parsley 

Method

  1. Preheat the oven to 180°C. Cut the bread into one-inch squares and toast in the oven till golden. Heat the olive oil in a non-stick pan; add the garlic cloves and sauté till brown. Mix together all the ingredients for the dressing.
  2. Add the browned garlic. Place the roughly torn lettuce, paneer, bread croutons and cherry tomatoes in a large bowl. Pour the dressing over and toss to mix with two forks. Serve immediately.
