Ingredients
- 1 medium lettuce, chilled
- 4 white bread slices
- 2 tablespoons olive oil
- 3 garlic cloves, chopped
- 100 grams paneer (cottage cheese), cubed
- 6 cherry tomatoes, halved
- 1 tablespoon vinegar
- 1/4 cup olive oil
- Salt to taste
- 1/2 teaspoon dried mixed herbs
- 5-6 crushed black peppercorns
- 2 teaspoons chopped fresh parsley
Method
- Preheat the oven to 180°C. Cut the bread into one-inch squares and toast in the oven till golden. Heat the olive oil in a non-stick pan; add the garlic cloves and sauté till brown. Mix together all the ingredients for the dressing.
- Add the browned garlic. Place the roughly torn lettuce, paneer, bread croutons and cherry tomatoes in a large bowl. Pour the dressing over and toss to mix with two forks. Serve immediately.
