Favourite seafood? Prawns, prawns and more of prawns. A wide variety of small crustaceans, tiny relatives of the lobster, are known as prawns. Prawns are normally translucent when raw but get their distinctive pink or red colour on being cooked. one word of caution – if buying unpeeled prawns, smell for freshness and look for bright, shiny shells that have some spring left in them.

Ingredients for Malai Pepper Prawns-SK Khazana Recipe

  • Jumbo prawns peeled and deveined with tails intact 12-16

  • Fresh cream 1/2 cup

  • Salt to taste

  • Black peppercorns crushed to taste

  • Red chilli flakes 1 teaspoon

  • Lemon juice 1/2 tablespoon

  • Garlic chopped 1 tablespoon

  • Fresh basil leaves a few

  • Medium green capsicum seeded and quartered 1

  • Medium red capsicum seeded and quartered 1

  • Medium yellow capsicum seeded and quartered 1

  • Olive oil 1 tablespoon

  • Oil for grilli

  • Micro greens for garnish

Method

Step 1

Put prawns in a bowl. Add salt, crushed peppercorns, ½ teaspoon chilli flakes, lemon juice, garlic, torn basil leaves and cream, mix well and set aside to marinate.

Step 2

Add crushed peppercorns, salt, remaining chilli flakes and olive oil to the mixed capsicum pieces and mix well.

Step 3

Skewer the prawns onto satay sticks.

Step 4

Heat some oil in a non-stick grill pan. Add capsicums and prawn skewers and grill, turning sides, till capsicums are well charred and the prawns are fully cooked all around.

Step 5

Place grilled capsicums on a serving plate and arrange the prawn skewers on top. Garnish with micro greens and serve hot.
