Ingredients for Mango Coriander Chicken Recipe

  • Ripe mango peeled and cut into cubes 1 large

  • Fresh coriander leaves roughly chopped ½ cup

  • Boneless chicken breasts 4 medium

  • Onions roughly chopped 2 medium

  • Ginger roughly chopped 1 inch piece

  • Garlic cloves roughly chopped 5-6

  • Coconut milk ½ cup

  • Oil 1 tablespoon

  • Lemon juice 2 teaspoons

  • brown sugar/jaggery 2 teaspoons

  • Salt to taste

Method

Step 1

Blend together the mango, coriander leaves, onions, ginger, garlic, coconut milk, oil, lemon juice, brown sugar and salt to a thick paste.

Step 2

Transfer the paste in a bowl and add the chicken breasts. Rub well and set aside to marinate for four to six hours.

Step 3

Preheat the oven to 180°C.

Step 4

Heat oil in a non-stick grill pan. Place the chicken breasts and cook till grill marks appear on both the sides.

Step 5

Place the breasts on a greased baking tray and cover with an aluminium foil. Put the tray in the preheated oven and bake for ten to twelve minutes.

Step 6

Serve hot.
