Ingredients list for Mango Ketchup

  • 5 medium Mangoes peeled and seeded
  • 1 tablespoon Ginger chopped
  • 3 tablespoons Vinegar
  • 1 teaspoon Sea salt
  • 1/2 cup Sugar
  • 1/2 cup White wine
  • 1/2 teaspoon All spice powder
  • 1/2 teaspoon Cayenne pepper
  • 1 Clove
  • 1 teaspoon Cinnamon powder

Method

  1. Blend the mango pulp with ginger, vinegar, kosher salt, sugar, white wine, all spice powder, cayenne pepper, clove and cinnamon to a smooth mixture.
  2. Heat a non-stick pan. Pour the mixture and cook on low heat for an hour or until it gets reduced or thickened.
  3. Remove from heat and allow to cool. Strain it and refrigerate for a day. The ketchup is ready to use.
