Ingredients list for Mexican Pizza

  • Dough
  • 3 tablespoons Cornmeal
  • 2 tablespo for dusting Refined flour
  • 1/4 teaspoon Turmeric powder
  • a pinch Carom seeds
  • to taste Salt
  • 1/2 teaspoon Red chilli powder
  • 2 tablespoons Oil
  • Stuffing
  • 1 cup Red kidney beans (rajma) boiled
  • as required Butter
  • 1 Medium onion chopped
  • 1/4 teaspoon Turmeric powder
  • 1 tablespoon Garlic chopped
  • 1 teaspoon Red chilli powder
  • to taste Salt
  • 1/4 cup + to serve Tomato ketchup
  • 3 tablespoons Pizza sauce
  • 1/4 cup Mozzarella cheese grated

Method

  1. To prepare the dough, take cornmeal in a bowl, add refined flour, turmeric powder, carom seeds, salt, red chilli powder and 1 tbsp oil in a bowl. Add water gradually and knead into medium soft dough like that for roti. Add remaining oil and mix well. Set aside for 10-15 minutes.
  2. and sauté on medium heat till lightly browned.
  3. Mash the boiled rajma with a masher, add to the onion in the pan and mix well. Add turmeric powder, garlic, red chilli powder, salt and ¼ cup tomato ketchup and mix well. Add 3 tbsps water, mix well and cook on medium heat for 2-3 minutes. Set aside to cool.
  4. Divide dough into 2 equal portions and shape them into balls. Dust each ball with dry flour, place on the worktop and roll into thin rotis.
  5. Heat a shallow non-stick pan, place one roti at a time in it, apply some butter on it and flip. Apply some butter on the other side too and cook, turning sides till light golden brown specs appear on both sides.
  6. Spread a thick layer of stuffing on one roti, place the other roti on top. Apply pizza sauce evenly on top and top it with mozzarella cheese. Cover and cook on low heat till base become hard and the cheese melts.
  7. Transfer pizza on the worktop and cut into wedges with a pizza slicer. Transfer the wedges on a serving plate and serve hot with tomato ketchup.
