Italian cuisine has developed through centuries of social and political changes, with roots stretching to antiquity.  Italian cuisine is simple and a number of dishes having only four to eight ingredients.  They rely mostly on the quality of ingredients rather than elaborate preparation.
Noteworthy changes in Italian cuisine happened with the discovery of the New World and the introduction of potatoes, tomatoes, bell peppers and maize, which are now an integral part of this cuisine.  Italian cuisine is known for its regional diversity each with a distinct taste.  This cuisine today is probably one of the most popular in the world.

Ingredients for Mini Feta Pizzas Recipe

  • Pizza Breads 2-8 inch

  • Feta Cheese 4 tablespoons

  • Oil 2 tablespoons

  • Garlic finely chopped 5-6 cloves

  • Onion finely chopped 1/2 medium

  • Tomato puree 6 tablespoons

  • White pepper powder 1/4 teaspoon

  • Sugar 1/2 teaspoon

  • Salt to taste

  • Dried oregano crushed 2 pinches

  • Red capsicums 2 medium

  • Kalamatta olives halved 6

  • Fresh basil leaves 12 small

Method

Step 1

Pierce red capsicums with the prongs of a fork and place on direct flame until the skin gets charred. Rotate them over from time to time. Refresh under running water and scrape off the blackened skin.

Step 2

Halve, remove seeds and cut into long strips. Preheat oven to 150°C -170°C. Using a cookie cutter of 4.5 centimetres diameter, stamp out small rounds from the pizza breads.

Step 3

Heat one tablespoon oil in a pan and sauté garlic and onion till they turn translucent. Add tomato puree and cook for one to two minutes or until the mixture comes to a boil.

Step 4

Add white pepper powder, sugar, salt and oregano and mix well. Remove from heat and set aside. Halve the roasted red capsicums, remove seeds and cut them into long strips.

Step 5

Place pizza rounds on a baking tray. Spread the tomato sauce on each round.

Step 6

Top with crumbled feta cheese and red capsicum strips. Bake in the preheated oven for four to five minutes or till cheese softens.

Step 7

Garnish with olives and basil leaves and serve hot.
