Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Mini Kumbh Kulcha - SK Khazana Recipe

  • Button mushrooms chopped 15-20

  • Refined flour 1 1/2 cups

  • Baking powder 1/2 teaspoon

  • Sugar 1/2 teaspoon

  • Salt to taste

  • Butter 2 1/2 tabl for basting

  • Milk 1/2 cup

  • Oil for greasing

  • Shimeji mushrooms chopped 15-20

  • Oil 2 teaspoons

  • Green chillies finely chopped 2

  • Onion medium, finely chopped 1

  • Salt to taste

  • Red chilli powder 1 teaspoon

  • Garam masala powder 1/2 teaspoon

  • Chaat masala 1 teaspoon

  • Coriander leaves freshly chopped 2 tablespoons

  • Cheddar cheese grated 1/4 cup

  • Mozzarella cheese grated 1/4 cup


Step 1

To make the dough, take refined flour in a bowl, add baking powder, salt, sugar, butter and milk and knead into a soft dough. Cover and set aside for 15-20 minutes.

Step 2

To make the filling, heat oil in a non-stick pan. Add green chillies and sauté for a few seconds. Add onion and sauté till translucent.

Step 3

Add button mushrooms, Shimeji mushrooms and salt and mix well. Cook on medium heat till the mixture is dry.

Step 4

Add red chilli powder, garam masala powder, chaat masala and coriander leaves and mix well.

Step 5

Turn off the heat and add cheddar cheese and mozzarella cheese and mix well. Set aside to cool down.

Step 6

Preheat the oven to 180˚C. Grease the baking tray with some oil.

Step 7

Divide the dough into small portions and shape each portion like a katori. Stuff each of them with the mushroom stuffing and bring the edges together to seal it. Press lightly and keep them on the greased baking tray.

Step 8

Apply melted butter on the prepared kulchas, keep the tray in the preheated oven and bake bake for 15-20 minutes. Serve hot.

Step 9

Bring them out of the oven, arrange on a serving plate and serve hot.
