Ingredients list for Minted Pea Soup

  • 2 cup Green peas Thawed, frozen
  • 5-6 Mint leaves
  • 1 teaspoon Oil
  • 1 medium Onion
  • 2 cloves Garlic
  • to taste Salt
  • 1/2 teaspoon Black pepper powder
  • 2 cup Vegetable stock
  • 2 cups Milk
  • 1 Lemon thinly sliced

  1. Heat oil in a non stick pan. Chop onion and garlic and add to the pan and sauté lightly. Add green peas, salt, pepper powder and 1½ cups vegetable stock and cook till peas are soft. Strain and reserve the stock. Cool the peas and put into a mixer jar. Add mint leaves and remaining cold stock and grind to a smooth puree.
  2. Pour the puree into the pan, add the strained stock and mix well and heat. Add milk and mix. Cook till it comes to a boil. Pour into individual bowls and serve hot. If you want you can serve the soup with a slice of lemon.
