In ancient times in the more affluent homes, feasts often started at mid-day and ended when the sun set! The presentation of food was alluring with a practice to sing sacred verses to dedicate the meal to God.

Ingredients for Moong Sprouts Brown Rice Recipe

  • Moong sprouts 1/2 cup

  • Brown Basmati rice soaked in water for 3-4 hours 1/2 cup

  • Split green gram skinless (dhuli moong dal) soaked 2 tablespoons

  • Oil 3 tablespoons

  • Onions roughly chopped 3 medium

  • Green chillies 4

  • Cumin seeds 1 teaspoon

  • Cloves 7-8

  • Bay leaves 2

  • Cinnamon 2 1 inch stick

  • Cauliflower florets 5-6

  • French beans chopped 5-6

  • Carrots 2 medium

  • Salt to taste

  • Garam masala powder 1/2 teaspoon

  • Shelled green peas 1/2 cup

Method

Step 1

Heat oil in a pressure cooker. Chop onions and green chillies in a chopper. Put cumin seeds, cloves, bay leaves, cinnamon in the cooker and sauté till fragrant.

Step 2

Add onion-green chilli mixture and continue to sauté. Add cauliflower, French beans and moong dal and mix. Cut carrots into cubes and add.

Step 3

Add 3½ cups water and mix. Add drained brown rice, salt, garam masala powder and sprouted moong and mix. Let the mixture come to a boil. Add green peas and mix. Put the lid on the pressure cooker and cook under pressure till 3-4 whistles are given out.

Step 4

Open the lid when the pressure reduces completely and serve hot with yogurt or pickles and papads.
