Ingredients 

  • 10-12 button mushrooms, thinly sliced
  • 12-15 fresh coriander stalks, washed and roughly chopped
  • 2 tablespoons chopped fresh coriander leaves 
  • 2 teaspoons coriander powder ½ tsp oil 
  • 1 large onion, finely chopped Salt to taste
  • 2 teaspoons finely chopped ginger 
  • 2 teaspoons finely chopped garlic 
  • Crushed black peppercorns to taste
  • 4 tsps lemon juice
  • Fresh coriander sprig for garnish
  • Croutons to serve

Method

  1. Heat oil in a deep non-stick pan, add onion and mix well. Add a pinch of salt, mix and saute till onion softens. Add ginger and garlic and sauté for 1-2 minutes or till the raw smells disappear.
  2. Add mushrooms and mix well. Add a pinch of salt, mix and saute for 2 minutes or till mushrooms soften. Add coriander stalks, mix and sauté till they soften.
  3. Add 1¾ cups water and mix well. Add crushed black peppercorns and 1 tbsp coriander leaves and mix well. Add ¼ cup water and mix.
  4. Add Coriander Powder and mix well. Cover and cook for 15 minutes.
  5. Switch the heat off and blend the mixture with an electric hand blender till well blended.
  6. Place the pan back on heat, add 1 cup water, mix and let the mixture come to a boil. Cook for 5 minutes.
  7. Transfer into a serving bowl, garnish with coriander sprig and serve hot with croutons.
