Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Mushroom Matar Mustard Recipe

  • Button Mushrooms halved 10-15

  • Green Peas 1/2 cup

  • Mustard seeds 1 1/2 teaspoons

  • Oil 2 teaspoon

  • Cumin seeds 2 teaspoons

  • Onion seeds (kalonji) 1/2 teaspoon

  • Onions chopped 2 medium

  • Garlic chopped 7-8 cloves

  • Green chillies 3-4

  • Ginger 1 inch pieces

  • Coriander seeds 1 teaspoon

  • Potatoes 4-5 medium

  • Salt to taste

  • Turmeric powder 1/4 teaspoon

Method

Step 1

Heat oil in a non stick pan, add ½ tsp mustard seeds, cumin seeds, onion seeds, onions and saute till golden.

Step 2

Grind garlic, green chillies, ginger, coriander seeds, remaining mustard seeds in a mixer jar with a little water to a fine paste.

Step 3

Cube potatoes and add to pan and mix. Add mushrooms and the ground paste and mix. Pour 1 cup water into the mixer jar, shake it well and add to the pan.

Step 4

Add salt, turmeric powder and mix well. Cover and cook till potatoes are almost done.

Step 5

Add green peas and mix. Cover and cook till potatoes are completely done.

Step 6

Serve hot.
