Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Mushroom Paturi Recipe

  • Button Mushrooms finely chopped 10

  • Mustard Seeds 4 teaspoons

  • Poppy seeds 2 teaspoons

  • Hung curd 1 teaspoon

  • Green chilli paste 1 1/2 teaspoons

  • Salt to taste

  • Mustard oil 1 teaspoon

  • Banana leaves as required

Method

Step 1

Grind mustard seeds, poppy seeds, curd, green chilli paste and salt to a fine paste with sufficient water.

Step 2

Add mushrooms, oil and mix well.

Step 3

Take a banana leaf and cut into small squares.

Step 4

Place a portion of mushroom mixture and spread. Tie with a string.

Step 5

Heat a steamer and steam the parcels for ten minutes.

Step 6

Remove from the leaves and serve hot.
