Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Mushroom-e-Nazakat Recipe

  • Mushrooms 8 Big

  • Cheese grated 1/2 cup

  • Cornflour/ corn starch 1 tablespoon

  • Lemon juice 1 teaspoon

  • Black pepper powder 1/2 teaspoon

  • Salt to taste

  • Paneer (cottage cheese) grated 1/2 cup

  • Mixed herbs 1 teaspoon

  • Kasoori methi 1/4 teaspoon

  • Dry mango powder (amchur) 1/2 teaspoon

  • Cumin powder 1/2 teaspoon

  • Ginger-garlic paste 1 teaspoon

  • Sugar 1/2 teaspoon

  • coriander leaves chopped 2 teaspoons

  • Butter to roast

Method

Step 1

Clean the mushrooms in water to remove the dirt. Remove the stem of each mushroom and set aside.

Step 2

Dry the mushrooms and place them in the bowl. Add salt, cornflour, lemon juice and black pepper powder. Mix well.

Step 3

In another bowl mix cheese, cottage cheese, herbs, kasuri methi, dry mango powder, cumin powder, ginger garlic paste, sugar, coriander leaves and salt. Mix well.

Step 4

Fill the stuffing in the mushrooms, and cover with the stems.

Step 5

Grease the oven tray and place the mushrooms on it.

Step 6

Bake the mushrooms in a preheated oven at 150º degrees for 15 minutes.

Step 7

Remove from the oven and serve hot.
