Coastal cuisine of India loves the coconut. Be it Goan or Malwani, Karnatak, Tamilian or from Kerala, the taste of coconut reigns supreme. Think about a rich fish curry and try making it obliterating the coconut! It will pass off as a fake. Very correctly termed as the ‘plant of life,’ each and every part of the coconut plant is useful in one or the other way.

Cook time : 16-20 minutes

Ingredients for Nariyal Ki Barfi Recipe

  • Coconut 1 cup

  • Khoya grated 1 cup

  • Desiccated coconut 2-3 tablespoons

  • Ghee 1 1/2 tablespoons

  • Milk 2-3 tablespoons

  • Sugar Free Natura Diet Sugar 2-3 tablespoons

Method

Step 1

Heat ghee in a non-stick pan. Add scraped coconut and sauté till fragrant.Add khoya and mix well and sauté for 2-3 minutes.

Step 2

Add milk and sugar free, mix well and cook for 2 minutes.Add desiccated coconut and keep stirring for 30 seconds.

Step 3

Transfer the mixture into a greased aluminium tray and spread evenly. Place the tray in the refrigerator for about an hour.

Step 4

Cut into squares or diamonds and serve.
