Ingredients list for Olive Pickle

  • 20 Olives, halved
  • 1 teaspoon Mustard seeds
  • 1/2 teaspoon Fenugreek leaves (methi)
  • 1/4 teaspoon Asafoetida
  • 1/2 teaspoon Cumin seeds
  • 1 teaspoon Red chilli powder
  • to taste Salt
  • 3 tablespoons Olive oil
  • 1/3 cup Vinegar

Method

  1. Dry roast half of the mustard seeds, fenugreek seeds, asafoetida, cumin seeds.
  2. Grind dry roasted ingredients along with red chilli powder to a fine powder.
  3. Heat oil in a non stick pan. Add remaining mustard seeds.
  4. Once they splutter, add ground powder, salt and mix well. Sauté for a minute.
  5. Add vinegar and simmer for fifteen to twenty minutes. Add olives and mix well.
  6. Allow to cool. Pour in sterilized jar and use as required.
