Ingredients for Olive Pickle Recipe

  • Olives halved 20

  • Mustard seeds 1 teaspoon

  • Fenugreek seeds (methi dana) 1/2 teaspoon

  • Asafoetida 1/4 teaspoon

  • Cumin seeds 1/2 teaspoon

  • Red chilli powder 1 teaspoon

  • Salt to taste

  • Olive oil 3 tablespoon

  • Vinegar 1/3 cup

Method

Step 1

Dry roast half of the mustard seeds, fenugreek seeds, asafoetida, cumin seeds.

Step 2

Grind dry roasted ingredients along with red chilli powder to a fine powder.Heat oil in a non stick pan. Add remaining mustard seeds.

Step 3

Once they splutter, add ground powder, salt and mix well. Sauté for a minute.Add vinegar and simmer for fifteen to twenty minutes. Add olives and mix well. Allow to cool. Pour in sterilized jar and use as required.
