Ever wondered why the phrase “say cheese” is used just before a photograph is clicked? Simply because ‘cheese’ makes one smile! Not only the word but cheese as a food makes a lot of palates happy. It is an inexpensive, versatile and nourishing food. We have our very own Indian version as well as the ones made from soy milk that are even healthier. Whichever form, this is one food that is loved by one and all!

Ingredients for Open Cheese Samosa Recipe

  • Cheese

  • Refined Flour 100 grams

  • Ghee 15 grams

  • Carom seeds (ajwain) 1/2 teaspoon

  • For stuffing

  • Ghee 1 teaspoon

  • Carom seeds (ajwain) a pinch

  • Cumin seeds 1/2 teaspoon

  • Green chillies finely chopped 2

  • Potatoes boiled, peeled and mashed 2-3 medium

  • Ginger finely chopped 1 teaspoon

  • Red chilli powder 1 teaspoon

  • Amchur powder 1 teaspoon

  • Garam masala powder 1/2 teaspoon

  • Salt to taste

  • Green peas 1/4 cup

  • Processed cheese grated 1/2 cup


Step 1

Mix together maida, ghee and carom seeds in a bowl, add sufficient water and knead into a stiff dough.

Step 2

To make the stuffing, heat ghee in a non stick kadai. Add carom seeds, cumin seeds, green chillies and sauté till fragrant.

Step 3

Add potatoes and ginger and sauté. Add red chilli powder, amchur, garam masala powder and sauté for 2-3 minutes.

Step 4

Add salt and green peas and mix well. Transfer this mixture into a bowl and let it cool.

Step 5

Preheat the microwave for 3 minutes on grill mode.Divide the dough into equal portions and roll into balls. Roll out each ball into a square.

Step 6

Place a little potato mixture in the centre of each square, press two sides to seal keeping the centre side open.

Step 7

Arrange the samosas on a baking dish and bake for 6-8 minutes.

Step 8

Remove from the microwave, sprinkle cheese on the open side and bake further for 6-8 minutes.

Step 9

Transfer onto a serving plate and serve hot with tomato ketchup.
