Ingredients list for Over Loaded Potato Skins

  • 4 medium Potatoes boiled
  • 1 tablespoon Oil
  • 10-12 Bacon strips, chopped
  • to taste Crushed black peppercorns
  • a pinch Salt
  • ½ teaspoon Fresh thyme
  • ¼ cup + for garnishing Spring onion greens finely chopped
  • as required Processed cheese grated

Method

  1. Halve the boiled potatoes horizontally, scoop out the flesh and reserve it along with the shells.
  2. Preheat oven to 180º C.
  3. Heat oil in a non-stick pan. Add bacon and sauté for 2-3 minutes. Add potato flesh, mash lightly and cook for 1-2 minutes.
  4. Add crushed peppercorns and salt and mix. Add thyme and spring onion greens and mix well.
  5. Fill the potato shells with bacon mixture and place them on the baking tray. Put some cheese on top of stuffed shells.
  6. Place the baking tray in the preheated oven and bake till cheese melts.
  7. Serve hot garnished with spring onion greens.
