Hindi: palak
Treasure house of vitamins and minerals, spinach must be included in the week's menu. The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Palak Kishmish Recipe

  • Spinach 2 medium bunches

  • Raisins 1/2 cup

  • Onions 2 medium

  • Garlic cloves 7-8

  • Oil 2 tablespoons

  • Cumin seeds 1/2 teaspoon

  • Salt to taste

  • Pinenuts (chilgoze) 2 tablespoons

  • Crushed black pepper 1/2 teaspoon

  • Crushed red chillies 1/2 teaspoon

  • Fresh brown breadcrumbs 2 tablespoons


Step 1

Chop onions and garlic in a chopper.

Step 2

Heat oil in a non-stick pan, add cumin seeds and chopped onion-garlic and saute till golden.

Step 3

Chop spinach roughly.

Step 4

Add raisins and 1 cup water to the pan and cook for 2-3 minutes.

Step 5

Add spinach and salt and mix well. Add pinenuts, crushed black pepper and crushed red chillies and mix.

Step 6

Add fresh brown breadcrumbs and mix.

Step 7

Transfer into a serving dish and serve hot.
