Treasure house of vitamins and minerals, spinach must be included in the week's menu. The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Palak Olu Recipe

  • Spinach 2 bunch

  • Potatoes 2 medium

  • Red chilli powder 1 teaspoon

  • Asafoetida 1/4 teaspoon

  • Mustard oil 2 tablespoons

  • Black peppercorns 3-4

  • Cloves 3

  • Turmeric powder 1/4 teaspoon

  • Dry ginger powder (soonth) 1/2 teaspoon

  • Salt to taste

  • Ver (Kashmiri garam masala) 1/2 teaspoon

Method

Step 1

Peel, wash and cut the potatoes into small cubes. Mix the red chilli powder with Clean, wash and blanch the spinach in boiling water. Drain and chop finely. Keep aside.

Step 2

one tablespoon of water and keep aside. Mix asafoetida powder with one tablespoon of water and keep aside.

Step 3

Heat oil in a wok, add the peppercorns, cloves and potatoes and fry for two minutes.

Step 4

Add the red chilli water, asafoetida water, turmeric powder, dry ginger powder, spinach and salt and cook uncovered till the potatoes are tender and the oil surfaces on top.

Step 5

Sprinkle ver and serve hot.
