Ingredients

  • 200 grams cottage cheese (paneer), cut into ½-inch cubes
  • 1 inch lemon grass, chopped
  • 1 teaspoon oil
  • 3 garlic cloves, chopped
  • 4-5 cups vegetable stock
  • 1 fresh red chilli, sliced
  • Salt to taste
  • ½ tablespoon lemon juice
  • 2-3 stalks spring onion greens, sliced

Method

  1. Heat 1 teaspoon oil in a wok; add 3 chopped garlic and sauté over medium heat for half a minute.
  2. Add 1 inch chopped lemongrass and continue to sauté for half a minute.
  3. Add 4-5 cups vegetable stock and bring to a boil. Lower heat, add 1 sliced red chilli, salt and simmer, uncovered, for 5 minutes, stirring occasionally.
  4. Add 200 grams cubed paneer and ½ tablespoon lemon juice, stir and continue to simmer for 1 minute.
  5. Ladle soup into individual serving bowls, garnish with 2-3 sliced spring onion greens and serve hot.
