Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Parval and Pumpkin Subzi Recipe

  • Pumpkin cut into ½ inch cubes 1 cup

  • Parvals cut into ½ inch cubes 1 cup

  • Oil 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Onion chopped 1 small

  • Sugar 1/2 teaspoon

  • Coriander powder 1 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Green chilli chopped 1/2 teaspoon

  • Ginger chopped 1/2 teaspoon

  • Tomato chopped 1 small

  • Salt to taste

  • coriander leaves chopped 2 tablespoons

Method

Step 1

Heat oil in a non stick add cumin seeds, when it starts spluttering add onions and saute till light brown.

Step 2

Add sugar,coriander powder, turmeric powder, green chillies, ginger and saute for a minute.

Step 3

Add tomatoes and saute till oil surfaces.

Step 4

Add pumpkin and parwar and half cup water and cook till vegetables are tender.

Step 5

Add salt and coriander and cook for a minute.

Step 6

Serve hot.
