Penne with Creamy Spinach and Corn

A unique mixture of penne pasta, spinach, corn kernels and parmesan cheese that is delicious too. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 3 cups penne pasta,boiled
  • 2 cups white sauce
  • ¼ cup milk
  • ½ cup spinach puree
  • ¾ cup corn kernels, boiled
  • ½ tablespoon olive oil
  • 1½ tablespoons finely chopped garlic 
  • 1 teaspoon red chilli flakes
  • Salt to taste
  • 2 teaspoons parmesan cheese powder
  • A fresh parsley sprig for garnishing

Method

  1. Heat olive oil in a non-stick pan, add garlic and sauté for a minute. Add ½ teaspoon of chilli flakes and mix. Add white sauce and mix.
  2. Add salt and mix. Add pasta, spinach puree and corn kernels and mix well. Add milk, mix well and cook on low heat for two minutes.
  3. Sprinkle Parmesan cheese powder, remaining chilli flakes, garnish with parsley sprig and serve hot.
