Ingredients for Pesto Fish Recipe

  • King fish (surmai) cut into darnes 4

  • Fresh basil leaves 15-20

  • Pinenuts 1/4 cup

  • Garlic 4-5 cloves

  • Olive oil 2 tablespoons

  • Oil to shallow fry

  • Onion rings to serve

  • Fresh mint sprig to serve


Step 1

Pour olive oil into a blender jar, add garlic cloves, basil leaves and pine nuts and blend to a fine paste. This is pesto.

Step 2

Transfer the pesto into a bowl, add the fish darnes and mix well so that the fish is well coated on all sides. Set aside to marinate for 15 minutes

Step 3

Heat sufficient oil in a non-stick pan, place the fish darnes in it and shallow-fry, turning sides, till they are evenly and lightly browned on both sides. Drain on absorbent paper.

Step 4

Place them in a serving platter, garnish with mint sprig and serve warm with onion rings.
