History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Pineapple Burfi Recipe

  • Pineapple chopped 4 slices

  • Milk 1 litre

  • Ghee for greasing

  • Yogurt 1/2 teaspoon

  • Sugar 1 cup

  • Citric acid 2 pinches

  • Pineapple essence a few drops

Method

Step 1

Boil milk and remove from heat and cool it down to room temperature .

Step 2

Grease an aluminum tray and set aside.

Step 3

Add yogurt to the milk and mix well.

Step 4

Heat this mixture in a heavy bottom vessel stirring continuously and cook until thick.

Step 5

When the mixture reduces to half its original quantity stir in the sugar.

Step 6

issolve citric acid in little water and add to the above mixture.

Step 7

Cook until all the moisture is absorbed. Add pineapple essence and spread half the mixture on the greased tray, spread the chopped pineapple over and top it with the remaining mixture.

Step 8

Level the surface and set aside to cool and set. Cut in to squares and serve.
