Ingredients list for Pineapple Shikanji

  • 1 medium Pineapple peeled
  • 1/2 cup Fresh mint leaves
  • 1/2 cup Powdered sugar
  • 1 tablespoon Chaat masala
  • 1 teaspoon Dried mango powder (amchur)
  • 1 teaspoon Roasted cumin powder
  • 1 teaspoon Black salt
  • Juice of 2 lemons
  • 6-8 Ice cubes
  • For garnishing
  • 4 thick Pineapple wedges
  • 4 Lemon slices
  • 4 Fresh mint sprigs

Method

  1. Heat a non-stick grill pan. Cut pineapple into thick slices and remove the core. Place the slices in the pan and grill, flipping sides, till evenly golden from both sides.
  2. Transfer the grilled slices into a mixer jar and let them cool. Add mint leaves, powdered sugar, chaat masala, dried mango powder, roasted cumin powder, black salt, lemon juice, ice cubes and 2 cups of water and blend.
  3. Pour the shikanji into 4 tall glasses.
  4. Decorate each glass with a pineapple wedge, a lemon slice and a mint sprig and serve chilled.
